Bird’s eye chilli was at one stage the hottest chilli on the planet. It is a small chilli but has quite a lot of fire; it is rated as 50,000 to 100,000 in Scoville units. The chilli is used as a spice in both Asian and Indian cooking.
How to cook Birds Eye Chilli
Dried chilli is heavily used in Indian cooking. To develop the flavour of dried chillies add them close to the start of cooking, this will allow the dried chilli to absorb some of the moisture and flavour of the dish, as well as releasing its fiery flavours.
If you find that the chilli is too spicy for your taste then simply slice and deseed the chilli.
