Coconut Cake

  • 1 Egg White
  • 150g/5oz Caster Sugar
  • 75g/3oz East End Coconut Flour
  • Rice Paper
  • Glace Cherries
  • Crystallised Angelica


  1. Beat the egg white until stiff, and then beat in the sugar and coconut flour.
  2. Spoon into a cake tin.
  3. Garnish with the cherries and angelica.
  4. Preheat the oven at 180C/350F/Gas mark 4, bake for 15mins or until it starts to brown.
  5. Serve warm or cold.
